Busy Week Menu

Ok, so my week wasn't terribly busy!  But dinners took a lot shorter than usual this week.  I was short on dinner making time 2 of the 5 days and I know the bf would have eaten peanut butter and pasta for dinner if I didn't intervene...

Tacos - black bean - tomato - cilantro - green pepper - sour cream - refried beans

Even Snoopers wanted some...actually, he was just after the cheese.

I headed to our weekly craft night where dinner would be served. Since I was having lasagna, I figured the bf should have some too. I took out a pre-made Frozen Lasagna for him and for lunches the rest of the week.

This had coffee in it which gave an interesting taste that you wouldn't be able to place if you didn't make it yourself. I had about 6 people over for an engineering outreach planning meeting so I didn't have much time to cook. We had this with cornbread and cheese. I also made sweet banana avocado dip and tahini tango veggie dip from Raw Energy: 124 Raw Food Recipes for Energy Bars, Smoothies, and Other Snacks to Supercharge Your Body

We had so much chili leftover that we ate it for dinner again Thursday :)

 I put everything together the night before because I had an early meeting Friday morning.
 Stored the inner crock in the fridge with saran until the morning, plopped it in the slow cooker and turned it on.  Nothing easier than that!
Made white rice to go with it.  The chicken was SO tender.  Tasty, flavorful soup which will make good leftovers.

In other news...I had a Green Smoothie for breakfast this week:

As well as some Chia Pudding from OhSheGlows.  This stuff was addicting!
