Ethnic Food Weekly Menu


Saturday:
Barbeque Chicken Pizza with dough from Pioneer Woman


Chicken from the freezer sauteed in olive oil, then cubed and sauteed with onions.  Cover pizza dough with BBQ sauce, chicken, onions and random cheese in the fridge.  Bake until crust is browned.


Sunday:
Chicken Shawarma from Arabic Food Recipes
Marinate the chicken.
 Make the garlic sauce.
 Check out my new Christmas present  :)
 It works for pancakes AND grilling!
Yum!  Kind of hard to get a pic with lettuce sticking out every which way!
Monday:
California Roll Sushi and Philadelphia Roll Sushi
 I did a great deal of research as to how to make these things.  My favorite videos on how to make sushi are:

Shaved Fennel Salad w/ Olives and Marinated Sardines


Three course meals are a lot of effort.  I was originally going to make all recipes out of this book for the week, but then decided against it because I didn't want to be up till 10PM every night making dinner.  I really like the book because it splits the meals up by season.

Wednesday:
Spinach Enchiladas from AllRecipes with Ten Minute Enchilada Sauce

Filling and enchilada sauce simmering.
 Kind of looks like a bit of a mess, but was tasty.  I used blue corn tortillas.

Thursday:
Portobello Pot Pie from AllRecipes

Not a great picture.  It tasted ok; not sure I would make it again.  My dinner guests liked it!  I made the pie crusts the night before.

Friday:
Taco Salad with inspiration from Kalyn's Kitchen and Two Fat Als

Ingredients:
  • For Meat
    • 1 lb Ground Turkey
    • 1/4 t each of: Chili Powder, Garlic Powder, Red Pepper Flakes, Paprika, Cumin, Oregano and Onion Powder
    • Shake of salt and pepper
  • For Salad
    • Head of Romaine Lettuce, shredded
    • 2 Tomatoes, chopped
    • 1/2 cup Cilantro, chopped
    • Green Pepper, chopped
  • For Garnishing
    • Shredded Cheese
    • Salsa
    • Guacamole (2 avocados mashed, garlic salt, olive oil, lemon juice)
    • Sour Cream
    • Tortilla Chips
 Instructions:

  1. Cook ground turkey in skillet with a bit of olive oil.  Add all spices a few minutes before all pink is gone.  Finish cooking and remove from heat.
  2. Mix all salad fixings together.
  3. Set up a self-serve line with salad, turkey and toppings.  Recommended order for beauty: salad, ground turkey, cheese then all remaining toppings ended by tortilla chips around the bowl.  Recommended order for practicality: tortilla chips, salad and then toppings.
  4. Crush up tortilla chips and mix everything up well before eating if you like


For the all important Dessert, I made Winter Delight Peppermint Cake from Sweetapolita

The 3 layers of 8" cake would have made the cake far too tall...so we had 2 cakes  :)
Cake was ok...but we have had much better.  The cake was dry and the frosting was too buttery.  BUT, I am more than willing to try every other cake on her blog  :)

On another note, I got to use 2 more of my Christmas presents: a cake turn table and frosting spatula...?
