Tuna Fish Challenge

This week was a bit of a comfort week.  We had one of those huge cans of tuna from Sam's Club to use up and the bf was getting a bit sick of my random kitchen creations.

BUT, that doesn't mean I couldn't play with my dehydrator.  I made some granola bars from rawtarian and was very much impressed.  The recipe called for a lot of ingredients, but it was all worth while.  Even breaking the buckwheat grout bag at the checkout line in Whole Foods and having 2 clean-up personnel called to the scene was worth it  :)   The Whole Foods people were very nice about the mishap even though I was completely embarrassed standing in a huge pile of buckwheat grouts...

Anyways, here's the recipe for these delightful bars.  They got reviews from co-workers and family such as "You should sell these" and "These are amazing"   :)
Mom's Tuna Casserole
This is one of those easy recipes that you can pretty much make from items already in your pantry.  This was a childhood favorite of mine.


  • 6oz can Tuna
  • 1 cup Elbow Macaroni
  • small Onion, chopped
  • can Peas, drained
  • can Mushrooms (or fresh), drained
  • 1/2 cup Milk
  • can Cream of Mushroom Soup
  • Cheese for topping
  • Boil Macaroni, drain
  • Mix everything together in casserole dish EXCEPT peas
  • Cook for 1 hour at 350 adding peas during the last 10 minutes
  • Top with cheese during last 5 minutes of cooking or add to individual portions when eating

I was hoping this would turn into a meal, but it ended up being a side dish to tuna sandwiches...I think we ate too much fish this week...  This nutritional yeast is interesting stuff.  The dish felt cheesy, but it didn't actually taste cheesy...make sense?  Good!  ;)

Salmon and Buckwheat Tabbouleh from OhSheGlows

No, I didn't realize that we were already eating fish all week..haha  The bf seasoned and cooked the salmon though  :)  I just had to make the Tabbouleh.  It wasn't all that great, but then again, those weren't fresh tomatoes out of the garden either  :(

No grill here, just the oven and my pizza stone.  

Bf said that the last one I made was better...I didn't eat dinner today because I spent my lunch here.  No one should eat that much meat in one sitting...haha
