Meat Week

I know, I know...I don't know what happened...but we ate meat 3 times this week.  Not even white meat either.  Pork, fish and more pork.  I don't know what got into me..I do know that I bought 2 weeks worth of groceries since this weekend will be filled with a bridal shower, a bachelorette party and a wedding.  With the bf putting anything he can get his hands on in the cart (usually beer, wine and cheese) I probably would save money if I only went shopping every 2 weeks  :)

 I feel bad that I didn't get a proper photo...but here is what lunch looks like for the next day.hah
Ended up using pork chorizo, roasted red pepper from a jar (bought these multiple times from Whole Foods and love them) and a pretzel loaf that was on sale - 2 loaves for $2.  My reasoning for buying the pork was that I wanted something with some spice - aka the chorizo - and the chicken chorizo was not looking so great.

These were quite good.  I can foresee us eating many fish tacos this summer.


BLT Pizza - An ongoing search for perfection
My parents own a cabin up on Wixom Lake and we would go up there often in the summer time.  One of my most favorite foods, besides grandma food, was the BLT Pizza at the local store down the road.  They specialized in fish, tackle, beer, snacks, and amazing pizza.  Since I moved downstate, they closed and sold their recipe to another business in town.  Good thing my mother figured that out.  I almost cried when I thought I would never be eating BLT pizza again.  Their BLT pizza is the best I have ever had.  Nothing tops it.  Maybe it is because I grew up with it, or maybe it is because it is that good.  Either way, I will be dissecting one this summer to try and figure it out.  2.5 hours is too far to drive for pizza.

Today I tried a recipe from Food.com
 Mayonnaise on the bottom topped with bacon (yes, pork bacon..I know...) and cheddar & mozzerella cheese.  The only thing I know is different about the holy grail of BLT pizzas is that it has much more mayonnaise (or some kind of other special blend of sauces) along with ham and possibly a pizza sauce.
 Being 85 degrees out and trying to keep the house cool - what is with this weather?! - we decided to cook it in the oven outside.
 I was a bit scared to put my baking stone on there....afraid this post would turn into "what not to do with your baking stone",...
 But everything turned out nicely.  Pizza browned up perfectly.  I love this crust from all recipes.
 Here she is topped with the lettuce, tomato and 2 more slices of bacon.  I am not skilled at cooking bacon.  I think the bf should be in charge of any bacon related cooking from now on...
I love that I can now take photos outside.  The lighting is much better for my non-professional point and shoot camera.

Alas, I bid you farewell.  See you on the other side of the weekend.  Probably Monday when I have the day off and will finish putting in the garden.
