Sandwich Week

While reading my monthly Runner's World magazine, I stumbled across a listing of sandwich recipes.  In order to make my recipe planning for the week easier, I decided to make one a day and pair it with a salad.

Salmon Sandwich with Green Salad from ABC Blog

 The salmon sandwich, made from canned salmon, was a winner.  Whole Foods bread helps  :)   We really enjoyed the green salad also.  It was easy and had a great taste.

Fig Prosciutto Sandwich with Tomato and Nectarine Salad from Fit Housewife

 The best part about this meal was the fresh sliced mozzarella in the salad.  The bf really liked the sandwich (red meat?!) but I didn't care for it.

Curry Egg Salad Sandwich and Summer Couscous Salad from A Nutritionist Eats

This was by far my favorite sandwich of the week.  I am sad that you can't see the egg curry with all the cilantro.  The couscous salad was good too.  Just remember not to heat it up  :)  Warm cucumbers aren't very appetizing.

Almond Pear Sandwich

 I got a bit lazy on Thursday.  Had a potluck at work and ate way too much, as usual, so I didn't really feel like making the salad I had planned.  I didn't eat this sandwich, but the bf and his father did.  Their reviews were positive.

Thai Turkey Burgers from Iowa Girl Eats

Dare I say "Best burger ever!!!"?  Wow, the flavors of this burger were amazing.  I made it with ground turkey instead of chicken because that is what I had on hand.  The peanut sauce with the mango salsa made this burger.  We ate it on lettuce and I think it was better this way than on a bun so that you got the whole flavor of the burger.  Served with deep fried sweet potato wedges. And....  an APPLE PIE!

A 14 Cup Cuisinart Food Processor!  Thank you boyfriend!!!  I will repay you with many yummy meals  ;)
