While reading my monthly Runner's World magazine, I stumbled across a listing of sandwich recipes. In order to make my recipe planning for the week easier, I decided to make one a day and pair it with a salad.
This was by far my favorite sandwich of the week. I am sad that you can't see the egg curry with all the cilantro. The couscous salad was good too. Just remember not to heat it up :) Warm cucumbers aren't very appetizing.
Almond Pear Sandwich
I got a bit lazy on Thursday. Had a potluck at work and ate way too much, as usual, so I didn't really feel like making the salad I had planned. I didn't eat this sandwich, but the bf and his father did. Their reviews were positive.
Dare I say "Best burger ever!!!"? Wow, the flavors of this burger were amazing. I made it with ground turkey instead of chicken because that is what I had on hand. The peanut sauce with the mango salsa made this burger. We ate it on lettuce and I think it was better this way than on a bun so that you got the whole flavor of the burger. Served with deep fried sweet potato wedges. And.... an APPLE PIE!
