Healthy Veggie Week!

Well, we got back on the bandwagon with no meat this week.  All the dishes were quite good as well.  Perfect winter food.

Red Lentil, Tomato and Kale Soup with French Bread  

(YAY for on sale bread at whole foods!)
 Warm and spicy, but the least-yummy dish of the week.

Maple Baked Lentils and Cardamon Bread

Yum!  These lentils were so good.  Tasted like baked beans!  The cardamon bread required about twice as much cardamon as called for.  Bring on the spice!

Sweet Potato and Brussels Sprout Hash

This dish was oooh sooo good!  The sweet and spicy and the eggs.  Perfect winter dish.

Baked Potato Soup 


This was pretty good, but I wish I had only blended one half of the soup.  It needed something to chew on.


On a side note...can't wait till our wedding when we can register for bowls that are not cracked and from salvation army!!!  :)
