2014 Food Blog Challenge - Oh She Glows

What a joy to have my 2nd week of 2014 blog recipes be from Oh She Glows - one of my favorite blogs!  Angela always has great, healthy recipes; all 100% vegan and most recently becoming gluten free too.  Most recipes I make from Oh She Glows are fresh and great for the summer.  But with this week being winter, I decided to make warm dishes - mostly soups.  And after making two of the recipes and eating them, I realized I had already made them once before.  Funny how it takes biting into something to realize you had had it before.

As a snack and dessert for the week, I made

Baked Granola Bars

These were good in that they were healthy, crunchy with their seeds, and with no sugar!  Angela just posted a new recipe for Banana Bread Muffin Tops....mmmmmm  I need to try these.

Millet Bowl with Mushroom Gravy and Kale


I made this for the boys and my cousin before they went to Nitro Circus and my cousin and I went to band practice.  It was well received.  I would say this is a good dish for those that usually eat meat :)

Layered Eggplant and Zucchini Casserole


I used up the leftover hummus and spinach dip from last week and this tasted amazing.

Maple Butternut Squash Apple Casserole


Josh liked this one.  I feel that the flavors were good, but it for sure needed the rice for some substance.  Made the rice in my rice cooker  :)

Shepard's Pie


I made this with the vegan gravy, which was interesting in itself.  Kind of sweet, but it worked.  I liked it.  Josh wasn't as crazy about it.

Not Your Average Potato Soup


Yeah yeah, I know, not a yummy photo at all...  I forgot to take a photo when we ate it.  So, here is the leftover photo.  This was good - not crazy good, but good.  We have a lot left over...this may need to go in the freezer.

New Years BBQ Chili


Yup, leftover photo again.  Made this with some Jiffy Corn Bread Muffins.  I tried it in the slow cooker and the beans didn't cook all the way through.  But, with the muffins, it was good.  Again, might need to put this guy in the freezer too as we have a lot of leftovers.

I made most of these dinners (or at least cut up the veggies) the night before to make it quick for me when I got home.  I really liked making dinners this way, so I didn't have to try to rush when I got home.
