2014 Food Blog Challenge - How Sweet It Is

The blog for this week was How Sweet It Is (or How Sweet Eats)

She likes James Taylor, but hates vegetables.  While I love James Taylor - I definitely felt that we were missing vegetables this week.  Funny how when I was shopping, I got half as many vegetables and twice the amount of cheese as normal.

I changed it up for breakfast this week from banana oatmeal to Breakfast Quinoa.  I never thought of quinoa as a breakfast grain, but it worked well.  For dessert I made the Oatmeal Peanut Butter Bites.  These melted with a spoonful of peanut butter and covered in greek yogurt were our dessert for the week.

As for dinners...

Buffalo Quinoa Sliders

Very good, but we probably should have had these with a salad!

Spinach and Artichoke Linguine

I used some chia seed pasta for this and it tasted really good.  There were all kinds of yummy cheeses in here, so it was quite good.

Pineapple Cashew Fried Rice

I frantically threw this together before band practice Wednesday.  Threw it in the car for my cousin and I and we ate at practice.  I made it with tofu.  Everything came together really well.  Very good overall dish.

Cheesy Double Bean Quesadillas with Avocado Ranch

These were delicious.  Good for you?  Probably not. 

Butternut Mushroom and Fontina Nachos

More cheese.  Yum!

Tiramisu French Toast

I wanted to like this, I truly did.  I absolutely hate it when I make something that smells and looks amazing but does not taste good to me.  Josh liked it.  I grew up hating maple syrup and I still have a bit of an aversion to eggs when they have that eggy taste.  French toast generally has that taste.  And it probably doesn't help that my instant coffee was a tad bit old...

So, overall, I was happy with the recipes I made.  They all tasted good - but I think that was on account of the cheese.  The easiest way to cover up not having meat in a dish is to add cheese, and I feel like that is what was done in a lot of these.  Not that cheese is bad, but I need a balance between my cheese and veggies.

AND - I wish she would have posted this breakfast a week earlier - it looks delicious!!!
