The Lost Food Chronicles

Oh hey, hi, yeah, it has been a bit hasn't it?

Ah well, summer was calling my name a bit.  In recent news, it is gorgeous outside, we have been working hard on the house: tore out the ugly blue bathroom, and did some landscaping.

Don't fear though, I have still been cooking  :)   Here is the looooong summary of what we have eaten in the last month.

First, lets start out with something impressive.  It is a bread with only 5 ingredients and no flour.  Check out the Sprouted Wheat Bread.  You start by soaking the wheatberries and then sprouting them.  From there, you food process them along with the honey, water, yeast and salt.  It make a pretty dense bread, but it made us feel super healthy!  It also takes about 3 days to make...  :)

A Couple Cooks

Scrambled Egg and Asparagus Tacos

Tortilla Bowl

Radish and Egg Salad Sandwiches

with my homemade sprouts  :)

Broccoli Cheese Stuffed Sweet Potatoes & Rueben Grilled Cheese

I also made their mint chocolate chip ice cream and blended it with a handheld blender every 30 minutes for 3 hours.

Buttermilk Waffles from girlichef

Lemon curd, quinoa granola and an orange - heck yes!

Threw in a little Oh She Glows - because she always has awesome new stuff on her blog!

Roasted Potato, Asparagus & Lentil Salad

Raw Triple Berry Crisp

Cookie + Kate

West African Peanut Soup

Mushroom, Spinach & Avocado Quesadillas

Sugar Snap, Pea and Carrot Soba Noodles

Cauliflower, Farro, Feta and Avocado Salad

Portabella and Poblano Fajitas with homemade corn tortillas!

Strawberry Kale Salad with Nutty Granola Croutons

Banana Nut Waffles

These were awesome!  The crunchy of the waffles plus the sweet and yummy fruit...yummmmmmm

Burger Week!

I was really feeling like making burgers, so instead of picking one blog, I did multiples!  And instead of having burger buns all week, we ate them on top of lettuce or alone.  Oh and each of the burgers came with a paired salad :)

Baked Broccoli Burgers & Shaved Asparagus Parmesan Salad

Mediterranean Veggie Burger

Barley Beet Mushroom Falafel Burger & Not Just an Egg Salad

Smokey Beet Burgers & Radish Fennel Parmesan Salad

Sweet Potato Burgers with Roasted Garlic Cream

Two Salads - One & Two - not pictured

Vegan Richa

Ultimate Roasted Veggie Sandwich

This sandwich was in preparation for having my SWE peeps over the next weekend.  Veggies on the grill are awesome!  Just need a good sauce to go with them, like hummus :)

Mini Vanilla Pound Cake with...

Strawberry Shortcake and Ice Cream!!!!

I would not really recommend this pound cake...would rather just use some butter and eggs than almost half cup of olive oil that this called for.

Rainbow Chard and Peas in Creamy Gravy

This dish was AWESOME!  So spicy and creamy at the same time - yay for Indian food!  Went on the keepers list!

I made this Mushroom Pasta but it was so bland, I didn't even take a photo.  Disappointing!

Sweet Potato Lasagna

This one was yummy, but mostly because I used real cheese  ;)

Tomato Garlic Mozzarella Pizza

It was good because I used real cheese, but not so good because I used 100% spelt flour for the crust.  Half spelt, half white or whole wheat probably would have been a better idea.

Messy Vegetarian Cook

Fried Potato Dumplings with Sauerkraut and Greens

Great way to use up the leftover Sauerkraut, and you can never go wrong with dumplings.

 Sweet Potato Eggplant Curry

I found out a lot of things with this blog.  Did you know aubergine is eggplant?  And cilantro and coriander are the same thing?

Coconut Rice Stirfry with Sweet Potato Chips

Vegetarian Thai Chili with Boiled Veggies

Broccoli Mac n Cheese

We ate this entire casserole dish in 1 sitting....whoops...

Whew!  That's it!  Hopefully I'll be back in less than a month..

I leave you with a perty photo of my little man - we are enjoying summer!
