This cake was quite good. I opted to use baked sweet potatoes instead of buying purple yam powder. The cream cheese frosting and earthy tones of the cake reminded me of carrot cake, which is my all time favorite type of cake! Baked for the win! :)
I made this for a work potluck (good way to get rid of a lot of cake when you are doing a cook book challenge..haha). It all disappeared, even with the dessert table which had more desserts than there was real food.
Only one disappointment - there was no leftover frosting after making the cake, not one bit. The dog and I were both hoping to have many bite fulls of frosting to have to eat....but no such luck.
