Baked: Sweet Potato Tart With Gingersnap crust And Heavenly Meringue

And heavenly is! I was really impressed with this dessert. The husband likes the purple sweet potatoes so I went with those and it gave it a very deep purple almost chocolatey color. I did not have a kitchen torch so I used the husband's torch from the garage but it did the trick :-)

The presentation of this dessert is also quite nice. The toasted meringue, the beautiful crust, and the sweet potato filling are all quite lovely. And it makes you feel a little bit healthy since you're eating a vegetable  ;)
